Description

A naturally sweet, moist quick bread made with ripe bananas, juicy peaches, and just five pantry-friendly ingredients—no refined sugar needed! Perfect for breakfast, snack time, or a light dessert.

For the Batter:

  • 1 1/2 cups Mashed banana (About 3 large ripe bananas)
  • 1/3 cup Peach juice (From the can or freshly squeezed)
  • 1/3 cup Light olive oil
  • 2 cups Self-rising flour

For the Peaches:

  • 1 cup Peach slices (Fresh or canned cored, peeled, finely chopped)
  • 2 Tbsp Self-rising flour (For coating peaches)

Optional Add-Ins:

  • 1 tsp Vanilla extract (Adds warm aromatic depth)
  • 1 tsp Ground cinnamon (For extra spice)

Instructions

Preheat & Prepare:

  1. Preheat oven to 350°F (175°C).
  2. Grease or line a 9×5-inch loaf pan with parchment.

Make the Batter:

  1. In a large bowl, whisk mashed bananas, peach juice, and olive oil until smooth.
  2. Stir in 2 cups self-rising flour until just combined.

Coat the Peaches:

  1. In a small bowl, toss peach slices with 2 Tbsp self-rising flour. Shake off any excess.

Combine:

  1. Gently fold the coated peaches into the batter.
  2. If using, stir in vanilla extract and cinnamon.

Bake:

  1. Pour batter into prepared loaf pan and smooth the top.
  2. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay).

Cool & Slice:

  1. Let the bread cool in the pan for 10 minutes.
  2. Remove loaf, slice, and serve warm or at room temperature.

Notes

  • Flour Substitute: If you don’t have self-rising flour, use 2 cups all-purpose flour + 3 tsp baking powder + ½ tsp salt.

  • Peach Prep: Fresh peaches add texture; canned peaches work best if drained and patted dry.
