For the Batter:
- 1 1/2 cups Mashed banana (About 3 large ripe bananas)
- 1/3 cup Peach juice (From the can or freshly squeezed)
- 1/3 cup Light olive oil
- 2 cups Self-rising flour
For the Peaches:
- 1 cup Peach slices (Fresh or canned cored, peeled, finely chopped)
- 2 Tbsp Self-rising flour (For coating peaches)
Optional Add-Ins:
- 1 tsp Vanilla extract (Adds warm aromatic depth)
- 1 tsp Ground cinnamon (For extra spice)
Instructions
Preheat & Prepare:
- Preheat oven to 350°F (175°C).
- Grease or line a 9×5-inch loaf pan with parchment.
Make the Batter:
- In a large bowl, whisk mashed bananas, peach juice, and olive oil until smooth.
- Stir in 2 cups self-rising flour until just combined.
Coat the Peaches:
- In a small bowl, toss peach slices with 2 Tbsp self-rising flour. Shake off any excess.
Combine:
- Gently fold the coated peaches into the batter.
- If using, stir in vanilla extract and cinnamon.
Bake:
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay).
Cool & Slice:
- Let the bread cool in the pan for 10 minutes.
- Remove loaf, slice, and serve warm or at room temperature.
