Cereal Base
- 3 cups corn flakes cereal
- 2 cups brown rice krispies cereal
- 1 cup creamy peanut butter (use from the divided amount)
Sweet Binder
- 3/4 cup honey
- 1/4 cup maple syrup
Chocolate Layer
- 12 oz semi-sweet or dark chocolate (melted (8-12 oz works))
- 1/4 cup creamy peanut butter (remaining from the divided amount)
Ghost Decorations
- 6 oz white chocolate (melted)
- candy eyes (for decorating)
- black sprinkles (optional) (for decorating)
Instructions
- Prepare the pan & cereal base: Line a 9×13-inch pan with parchment (overhang for easy lifting). In a large bowl, combine corn flakes, brown rice krispies, and 1 cup peanut butter. Mix until evenly coated.
- Make the sweet binder: In a small saucepan, bring honey and maple syrup to a gentle boil over medium heat; cook 2 minutes. Remove from heat and immediately pour over the cereal mixture. Stir until thoroughly combined.
- Press & chill the base: Press the sticky mixture firmly and evenly into the prepared pan (use a greased spatula or oiled hands). Chill 15 minutes.
- Add chocolate-peanut layer: Melt the dark chocolate with the remaining 1/4 cup peanut butter in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth. Spread evenly over the chilled base.
- Create the ghosts: Melt white chocolate until smooth. Spoon small dollops (1 tsp for mini ghosts; 1 tbsp for larger). Drag each dollop downward with a skewer to form wispy tails.
- Decorate & set: Press two candy eyes into each ghost head; add black sprinkle mouths if desired. Chill 15 minutes to set fully, then cut around the ghosts into fun, irregular bars. Boo!
Notes
For cleaner cuts, warm the knife under hot water and wipe between slices. Swap peanut butter for almond or sunflower seed butter if needed. Use gluten-free cereals if required.
