Ingredients
- 250 g Chorizo sausage (Sliced into rounds)
- 2 cans 400 g each Butter beans (Drained and rinsed)
- 1 medium Yellow onion (Diced)
- 3 cloves Garlic (Minced)
- 1 medium Red bell pepper (Diced)
- 1 can 14.5 oz Diced tomatoes (With juices)
- 2 cups Chicken or vegetable broth (Preferably low sodium)
- 1 tsp Smoked paprika
- 1/2 tsp Dried thyme
- 1 tbsp Olive oil
- 1 Bay leaf (Optional)
- To taste Salt and pepper (Adjust according to preference)
Instructions
Sauté Aromatics & Chorizo:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the diced yellow onion and red bell pepper; sauté for about 3–4 minutes until softened.
- Stir in the minced garlic and sliced chorizo. Cook for another 3–4 minutes, allowing the chorizo to release its flavorful oils and become slightly crispy.
Build the Stew Base:
- Stir in the smoked paprika and dried thyme, then add the can of diced tomatoes with their juices.
- If using, add the bay leaf. Let the mixture simmer for 2 minutes to meld the flavors.
Add Beans and Broth:
- Gently stir in the drained butter beans and chicken or vegetable broth.
- Bring the stew to a simmer, then season with salt and pepper.
- Allow the stew to simmer for 20–25 minutes so the flavors fully develop.
