  • 250 g Chorizo sausage (Sliced into rounds)
  • 2 cans 400 g each Butter beans (Drained and rinsed)
  • 1 medium Yellow onion (Diced)
  • 3 cloves Garlic (Minced)
  • 1 medium Red bell pepper (Diced)
  • 1 can 14.5 oz Diced tomatoes (With juices)
  • 2 cups Chicken or vegetable broth (Preferably low sodium)
  • 1 tsp Smoked paprika
  • 1/2 tsp Dried thyme
  • 1 tbsp Olive oil
  • 1 Bay leaf (Optional)
  • To taste Salt and pepper (Adjust according to preference)

Instructions

Sauté Aromatics & Chorizo:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the diced yellow onion and red bell pepper; sauté for about 3–4 minutes until softened.
  3. Stir in the minced garlic and sliced chorizo. Cook for another 3–4 minutes, allowing the chorizo to release its flavorful oils and become slightly crispy.

Build the Stew Base:

  1. Stir in the smoked paprika and dried thyme, then add the can of diced tomatoes with their juices.
  2. If using, add the bay leaf. Let the mixture simmer for 2 minutes to meld the flavors.

Add Beans and Broth:

  1. Gently stir in the drained butter beans and chicken or vegetable broth.
  2. Bring the stew to a simmer, then season with salt and pepper.
  3. Allow the stew to simmer for 20–25 minutes so the flavors fully develop.
  4. If using kale or spinach, add it during the last 5 minutes of cooking until wilted.

Finish and Serve:

  1. Remove the bay leaf, taste, and adjust the seasoning if needed.
