Description

This recipe relies on fresh produce and bold seasonings to create a memorable side dish. It combines tender potatoes, crisp green beans, and smoky bacon with a savory ranch butter sauce. Coming together quickly on the stovetop, it is the perfect companion to roasted meats or grilled chicken.

Ingredients

Units Scale
  • 1 pound Fresh Green Beans, trimmed
  • 1 1/2 pounds Baby Potatoes (Red or Yukon Gold), halved/quartered
  • 6 slices Bacon, cooked and crumbled
  • 1 packet (approx. 1 oz) Ranch Seasoning Mix
  • 3 tablespoons Butter, melted
  • 2 Garlic Cloves, minced
  • To taste Salt and Pepper
  • Fresh Parsley, chopped (for garnish)

Instructions

  1. Boil the Potatoes: Fill a large pot with water, season generously with salt, and bring to a boil. Add the prepared potatoes and cook for 10–12 minutes, until tender but not falling apart. Remove with a slotted spoon and set aside. Keep the water boiling.
  2. Blanch the Green Beans: Add the green beans to the same boiling water. Cook for 5–7 minutes, until tender-crisp. Drain thoroughly and set aside with the potatoes.
  3. Cook the Bacon: Fry the bacon slices in a large skillet over medium heat until crispy. Remove, crumble into pieces, and reserve about 1 tablespoon of the bacon grease in the skillet.
  4. Make Ranch Butter: In a small bowl, whisk together the melted butter, ranch seasoning mix, and minced garlic until smooth.
  5. Combine and Toss: Over low heat, add the cooked potatoes, green beans, and crumbled bacon back into the skillet with the reserved bacon grease. Pour the ranch butter mixture over the vegetables. Gently toss until evenly coated and heated through.
  6. Serve: Taste and season with extra salt and pepper if needed. Garnish with fresh parsley and serve warm.

Notes

  • Uniform Cutting: Cut your potatoes into uniform sizes (halves or quarters) to ensure they all cook at the same rate.
  • Don’t Overcook Beans: You want the beans to maintain their vibrant color and slight snap. If not serving immediately, you can plunge them into an ice bath after boiling to stop the cooking process.
  • Liquid Gold: Don’t skip reserving the tablespoon of bacon grease! It adds an incredible smoky depth of flavor to the final dish.
