Description
Festive, jewel‑toned, and effortless: a creamy chèvre log rolled in a citrusy mix of cranberries, pistachios, and honey. Ready in minutes, perfect for holidays or wine night.
Ingredients
Cheese Log
- 8 oz goat cheese (chèvre) log (room temperature for easier handling)
Cranberry–Pistachio Coating
- 1/4 cup dried cranberries (finely chopped)
- 3 tbsp pistachios (shelled, roasted; finely chopped)
- 1 tbsp honey (to bind and add floral sweetness)
- 1 tsp orange zest (freshly zested)
For Serving
- crostinis or sturdy crackers (for serving)
Instructions
- Prep Coating: Finely chop cranberries and pistachios. Zest orange to get 1 tsp. In a shallow bowl, mix cranberries, pistachios, zest, and honey until the mixture is evenly sticky and gravel‑like.
- Coat Log: Unwrap chèvre. With clean hands (or plastic wrap), press and roll the cheese in the coating until fully covered, gently pressing to adhere.
- Plate & Serve: Transfer to a serving board. Surround with crostinis or crackers; drizzle a touch more honey if desired. Serve immediately.
Notes
Best at cool room temperature for spreadability. For make‑ahead, roll in nuts + cranberries (no honey), wrap and refrigerate up to 24 hours; brush with a thin film of honey and roll again in a little fresh coating right before serving. Variations: swap pistachios for pecans, add minced rosemary, or use lemon zest.
