Description

A cozy, one-pot Italian sausage soup made creamy with Parmesan and a splash of heavy cream. Tender potatoes, wilted spinach, and aromatic herbs make this a weeknight favorite.

Soup Base

  • 1 pound Italian sausage (halal beef or turkey)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 4 medium potatoes, peeled & diced

Creamy Finish

  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • salt and freshly ground black pepper (to taste)
  • fresh parsley, chopped (for garnish)

Instructions

  1. Brown the sausage: Heat olive oil in a large pot over medium-high. Add Italian sausage and cook 5–7 minutes, breaking into bite-sized crumbles, until browned and cooked through. Transfer sausage to a plate, leaving drippings in the pot.
  2. Sauté aromatics: Add diced onion to the pot and cook 3–4 minutes until translucent. Stir in minced garlic and cook 30 seconds until fragrant.
  3. Build the base: Pour in chicken broth, scraping up browned bits. Add diced potatoes, dried oregano, and dried basil. Season with a pinch of salt and pepper. Bring to a boil, then reduce to a steady simmer and cook 15–20 minutes, until potatoes are tender.
  4. Make it creamy: Lower heat. Stir in heavy cream and Parmesan until melted and silky. Return cooked sausage to the pot and simmer on low 5–10 minutes to meld flavors.
  5. Finish & serve: Stir in fresh spinach to wilt, 1–2 minutes. Taste and adjust salt and pepper. Ladle into bowls and garnish with chopped parsley.

Notes

Use halal beef or turkey sausage as preferred. For extra body, mash a few potato cubes in the pot before adding cream. To lighten it up, swap half-and-half for some of the cream. Leftovers keep 3 days in the fridge; reheat gently without boiling to prevent curdling.
