Description

Discover a guilt-free way to enjoy your favorite crunchy snack with these Crispy Baked Zucchini Fries. Lightly seasoned and coated in a blend of panko and Parmesan, these fries are baked to perfection for a healthy alternative to traditional deep-fried options. Ideal as a side dish or a snack on their own, they’re crisp, delicious, and bursting with flavor.

Ingredients

Units Scale
  • 3 medium Zucchini (Washed; cut into fries or stick shapes)
  • 1/2 cup All-purpose flour (For dredging)
  • 2 large Eggs (Beaten at room temperature)
  • 1 cup Panko breadcrumbs (For extra crunch)
  • 1/4 cup Grated Parmesan cheese (Freshly grated for best flavor)
  • 1 tsp Garlic powder
  • 1/2 tsp Salt (Adjust to taste)
  • 1/4 tsp Ground black pepper
  • 2-3 tbsp Olive oil or cooking spray (For lightly coating the fries)

Instructions

Preheat Oven and Prep Zucchini:

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or lightly grease it.
  3. Cut the zucchini into fries by slicing them lengthwise into sticks about 1/2-inch thick.

Dredge and Coat:

  1. Place the flour in a shallow bowl.
  2. In another bowl, beat the eggs until smooth.
  3. In a third bowl, mix together the panko breadcrumbs, grated Parmesan, garlic powder, salt, and black pepper.
  4. Dredge each zucchini stick in flour, tapping off the excess, then dip into the beaten eggs, and finally coat evenly in the breadcrumb mixture.

Bake:

  1. Arrange the coated zucchini fries in a single layer on the prepared baking sheet.
  2. Lightly drizzle with olive oil or spray with cooking spray to help with crisping.
  3. Bake in the preheated oven for 20–25 minutes, flipping halfway through, until the fries are golden and crispy. If desired, transfer the fries to a cooling rack during the last few minutes of baking for extra crispiness.

Garnish and Serve:

  1. Remove from the oven and sprinkle with freshly chopped parsley (if using).
  2. Serve immediately with your favorite dipping sauce such as marinara or ranch dressing.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend and use gluten-free breadcrumbs.
  • If you prefer extra crunch, try double-dipping the zucchini (egg, breadcrumbs, then back in egg and breadcrumbs).
  • Serve these fries as a healthy snack, side dish, or appetizer to impress your guests with a guilt-free indulgence.

Enjoy your Crispy Baked Zucchini Fries—a delicious, healthy snack that’s easy to make and perfect for satisfying your crunch cravings!
