Ingredients
- 3 medium Zucchini (Washed; cut into fries or stick shapes)
- 1/2 cup All-purpose flour (For dredging)
- 2 large Eggs (Beaten at room temperature)
- 1 cup Panko breadcrumbs (For extra crunch)
- 1/4 cup Grated Parmesan cheese (Freshly grated for best flavor)
- 1 tsp Garlic powder
- 1/2 tsp Salt (Adjust to taste)
- 1/4 tsp Ground black pepper
- 2-3 tbsp Olive oil or cooking spray (For lightly coating the fries)
Instructions
Preheat Oven and Prep Zucchini:
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper or lightly grease it.
- Cut the zucchini into fries by slicing them lengthwise into sticks about 1/2-inch thick.
Dredge and Coat:
- Place the flour in a shallow bowl.
- In another bowl, beat the eggs until smooth.
- In a third bowl, mix together the panko breadcrumbs, grated Parmesan, garlic powder, salt, and black pepper.
- Dredge each zucchini stick in flour, tapping off the excess, then dip into the beaten eggs, and finally coat evenly in the breadcrumb mixture.
Bake:
- Arrange the coated zucchini fries in a single layer on the prepared baking sheet.
- Lightly drizzle with olive oil or spray with cooking spray to help with crisping.
- Bake in the preheated oven for 20–25 minutes, flipping halfway through, until the fries are golden and crispy. If desired, transfer the fries to a cooling rack during the last few minutes of baking for extra crispiness.
Garnish and Serve:
- Remove from the oven and sprinkle with freshly chopped parsley (if using).
- Serve immediately with your favorite dipping sauce such as marinara or ranch dressing.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend and use gluten-free breadcrumbs.
- If you prefer extra crunch, try double-dipping the zucchini (egg, breadcrumbs, then back in egg and breadcrumbs).
- Serve these fries as a healthy snack, side dish, or appetizer to impress your guests with a guilt-free indulgence.
