Scale
For the Fluffy Donut Bites
- 140 g self-raising flour (no-yeast lift built in)
- 140 g sweetened Greek yogurt (adds moisture, tang, and protein)
For the Cinnamon-Sugar Coating
- 2 to 3 Tbsp melted butter (helps cinnamon sugar stick)
- 3 Tbsp granulated sugar (for classic crunchy sweetness)
- 1 tsp ground cinnamon (use fresh, aromatic cinnamon)
- melted chocolate (optional) (for drizzling)
Instructions
- Make the dough: In a mixing bowl, combine self-raising flour and sweetened Greek yogurt. Stir with a spatula until a soft, shaggy dough forms.
- Knead & shape: Turn onto a lightly floured surface and knead gently for about 1 minute until smooth. Divide in two; roll each into a 1-inch thick log, then cut into bite-size pieces (about 8–12 g each). Roll into balls.
- Preheat air fryer: Heat to 180°C (350°F) for 3–5 minutes. Lightly oil the basket.
- Air fry: Arrange donut balls in a single layer with space between (they expand). Air fry for 5 minutes, until puffed and lightly golden. Uneven browning is normal.
- Coat: While warm, toss bites in melted butter, then in a bowl of cinnamon sugar (3 Tbsp sugar + 1 tsp cinnamon) until evenly coated. Drizzle with melted chocolate if desired.
Notes
Speed win: Done in 15 minutes—over 90% faster than traditional yeast donuts. If dough feels sticky, lightly oil or flour your hands. For crisper exteriors, air fry 1 more minute.
