Description
Escape to the tropics in under five minutes with this ultra-simple Chi Chi cocktail. Tangy pineapple juice, smooth vodka, and creamy coconut blend into a frosty, refreshing drink that’s perfect for lounging poolside or enjoying a mini vacation at home.
Ingredients
- Crushed or pebbled Ice (To fill the glass)
- 4 oz 100% pineapple juice (Such as Dole)
- 1 1/2 oz Vodka
- 1 oz Cream of coconut (Such as Coco López or Coco Real)
- 1 Pineapple wedge (For garnish optional)
- 1 Maraschino or Luxardo cherry (For garnish optional)
Instructions
Chill Your Glass:
- Fill your serving glass to the rim with crushed or pebbled ice. This pre-chills the glass and keeps your cocktail extra cold.
Shake It Up:
- In a cocktail shaker, combine 4 oz pineapple juice, 1½ oz vodka, and 1 oz cream of coconut.
- Fill the shaker three-quarters full with ice cubes, secure the lid, and shake vigorously for 20–30 seconds—until the outside of the shaker feels frosty.
Strain & Garnish:
- Strain the mixture into your iced glass.
- Garnish with a fresh pineapple wedge and a cherry, if desired.
Serve Immediately:
- Sip and enjoy your instant tropical escape!
Notes
-
Make It Frozen: Blend all ingredients with 1 cup ice for a slushy version.
-
Swap the Spirit: Substitute rum for vodka to turn it into a Piña Colada-style drink.
-
Adjust Sweetness: Use light coconut milk in place of cream of coconut for a less sweet cocktail.
-
Batch It: Multiply ingredients and shake in a large pitcher for party-sized servings—add ice only when pouring.
