Description

This is one of the fastest homemade snacks you can make! With just four main ingredients, this recipe couldn’t be simpler. The optional addition of Cinnamon Toast Crunch adds an extra layer of cinnamony goodness! The most challenging part is waiting for the chocolate to cool.


Ingredients

  • cups Chex Cereal (or 4 cups Chex + 2 cups Cinnamon Toast Crunch)
  • oz. Creamy White Chocolate Chips
  • tsp Ground Cinnamon, divided
  • cup Powdered Sugar

Instructions

  1. Melt the White Chocolate: Place the white chocolate chips in a microwave-safe bowl. Microwave at 50% power in 25-second increments, stirring after each, until mostly melted. Continue stirring until smooth. Stir in 1 ½ teaspoons of cinnamon.
  2. Coat the Cereal: Pour your cereal into a large mixing bowl. Pour the cinnamon-white chocolate mixture over the top. Gently fold and stir with a rubber spatula until all the cereal is evenly coated.
  3. Shake in Cinnamon Sugar: In a gallon-sized plastic bag, combine the powdered sugar and the remaining 1 ½ teaspoons of cinnamon; shake to mix. Add the coated cereal to the bag, seal tightly, and shake until every piece is thoroughly coated.
  4. Cool and Serve: Pour the snack mix onto a baking sheet in a single layer. Allow it to cool and set for about 15 minutes. Once the chocolate has hardened, the mix is ready to serve.

Notes

  • Melting White Chocolate: To prevent white chocolate from seizing (becoming grainy and hard), melt it slowly in the microwave at a lower power (50%) and in short bursts.
  • Make it Gluten-Free: This recipe is easily made gluten-free by using Rice Chex, Corn Chex, or another certified gluten-free Chex cereal.
  • Don’t Skip Cooling: The 15-minute cooling step is essential. It allows the white chocolate to harden, creating the classic crunchy texture of the snack mix.
