For the Muffins
- 1 1/2 cups all-purpose flour
- 1 cup quick-cooking oatmeal
- 3/4 cup light brown sugar, packed
- 1 tsp ground cinnamon
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup milk or apple cider
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1 tsp pure vanilla extract
- 1 cup finely chopped apple
For the Streusel Topping
- 1/4 cup quick-cooking oatmeal
- 2 Tbsp all-purpose flour
- 2 Tbsp brown sugar, packed
- 2 Tbsp unsalted butter, melted
- 1/4 tsp ground cinnamon
Instructions
- Preheat & prep pan: Heat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
- Dry ingredients: In a large bowl whisk flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt until evenly combined.
- Wet ingredients: In a medium bowl whisk eggs, milk (or cider), applesauce, oil, and vanilla until smooth.
- Combine & fold in apples: Make a well in the dry mix, pour in wet, and stir just until combined (a few lumps are fine). Fold in chopped apple; divide batter among cups.
- Streusel: Mix oats, flour, brown sugar, melted butter, and cinnamon with a fork until crumbly. Sprinkle generously over batter.
- Bake: Bake 15–20 minutes until tops are golden and a toothpick comes out clean. Cool 5 minutes in pan, then transfer to a wire rack.
Notes
Tender crumb tip: Do not overmix once wet and dry meet. For extra apple flavor, swap milk with apple cider. Dice apples small (pea-sized) so they soften fully in 20 minutes.
