Description

What You’ll Need: Pantry staples plus fresh apple, applesauce, and oats make moist, tender muffins crowned with a crunchy cinnamon-oat streusel. Applesauce + oil keep the crumb soft.

For the Muffins

  • 1 1/2 cups all-purpose flour
  • 1 cup quick-cooking oatmeal
  • 3/4 cup light brown sugar, packed
  • 1 tsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup milk or apple cider
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1 tsp pure vanilla extract
  • 1 cup finely chopped apple

For the Streusel Topping

  • 1/4 cup quick-cooking oatmeal
  • 2 Tbsp all-purpose flour
  • 2 Tbsp brown sugar, packed
  • 2 Tbsp unsalted butter, melted
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat & prep pan: Heat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
  2. Dry ingredients: In a large bowl whisk flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt until evenly combined.
  3. Wet ingredients: In a medium bowl whisk eggs, milk (or cider), applesauce, oil, and vanilla until smooth.
  4. Combine & fold in apples: Make a well in the dry mix, pour in wet, and stir just until combined (a few lumps are fine). Fold in chopped apple; divide batter among cups.
  5. Streusel: Mix oats, flour, brown sugar, melted butter, and cinnamon with a fork until crumbly. Sprinkle generously over batter.
  6. Bake: Bake 15–20 minutes until tops are golden and a toothpick comes out clean. Cool 5 minutes in pan, then transfer to a wire rack.

Notes

Tender crumb tip: Do not overmix once wet and dry meet. For extra apple flavor, swap milk with apple cider. Dice apples small (pea-sized) so they soften fully in 20 minutes.
