Description

This savory-sweet Tomato Bacon Jam is smoky, tangy, and irresistibly spoonable. Slather it on burgers, grilled cheese, eggs, or crostini — it truly goes with everything.

  • 1/2 lb smoked bacon (thick-cut)
  • 2 lb ripe tomatoes (chopped; Roma or vine-ripened)
  • 1 yellow sweet onion (finely diced)
  • 1 cup white sugar
  • 2 1/2 tbsp apple cider vinegar (for tangy balance)
  • 1 1/2 tsp salt
  • 1/4 tsp black pepper (freshly ground)
  • 1 dash hot pepper sauce (such as Tabasco®, to taste)

Instructions

  1. Cook the bacon: Add bacon to a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, about 10 minutes. Transfer to a paper towel-lined plate; cool, then crumble.
  2. Sauté the onion: Pour off all but about 1 tablespoon of bacon fat from the skillet. Add diced onion and cook over medium heat until softened and translucent, 5–7 minutes.
  3. Combine base: In a large saucepan, combine chopped tomatoes, sautéed onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce. Bring to a boil over medium-high heat, stirring until sugar dissolves.
  4. Add bacon & simmer: Stir in crumbled bacon. Reduce heat to maintain a steady simmer and cook, stirring often, about 60 minutes, until very thick. You should be able to drag a spoon across the bottom and leave a clean trail.
  5. Finish & store: Taste and adjust seasoning. Cool completely, then transfer to a clean 1-pint jar with a tight-fitting lid. Refrigerate.

Notes

Serving ideas: burgers, grilled cheese, eggs, roasted veggies, and charcuterie boards. Store refrigerated in a clean, sealed jar. For best quality, enjoy within 1–2 weeks. Always use a clean utensil.
