  • 1 can (10.5 oz) Condensed French Onion Soup (liquid drained)
  • 1/2 cup Sour Cream
  • 2 cups Sliced Mushrooms (fresh)
  • Fresh Parsley, chopped (for garnish)

Instructions

  1. Prepare the Sauce Base: Open the can of condensed French onion soup and drain the liquid, keeping only the onions. In a medium bowl, combine the drained onions, the two cans of cream of chicken soup, and the sour cream. Mix well until thick and creamy.

  2. Layer Ingredients: Place the pork chops in a single layer at the bottom of your slow cooker. Pour the prepared soup mixture evenly over the pork chops. Scatter the sliced mushrooms over the sauce.

  3. Cook on Low: Cover the slow cooker and cook on the LOW setting for 2.5 to 3 hours.

  4. Stir and Serve: Check that pork chops have reached an internal temperature of 165°F (74°C). Remove chops to a platter. Whisk the sauce remaining in the pot thoroughly to bring it back together. Spoon the gravy over the pork chops and garnish with parsley.

Notes

  • Important – Drain the Soup: Draining the liquid from the French onion soup prevents the sauce from becoming too watery as the pork releases its own juices.
  • Optional Sear: If you have time, sear the pork chops in a hot skillet for 2-3 minutes per side before adding to the slow cooker for extra flavor and color.
  • Don’t Overcook: Lean pork chops can dry out even in a slow cooker. Check them around the 2.5-hour mark.
  • Sauce Texture: The sauce might separate slightly during cooking. A vigorous stir or whisk at the end will bring it back to a creamy consistency.
