Ingredients

  1. 1 lb Ground Beef (80/20 or 90/10 lean recommended)

  2. 1 cup Long-Grain White Rice, uncooked

  3. 1 can (10.5 oz) Condensed French Onion Soup

  4. 1 can (10.5 oz) Condensed Beef Consommé

  5. 4 tbsp Unsalted Butter, sliced into pats

  6. 2 tbsp Fresh Chives, chopped (Optional garnish)


Instructions

  1. Preheat Oven and Prepare Dish: Preheat oven to 425°F (220°C). Generously grease a 9×13-inch baking dish.
  2. Brown the Ground Beef: In a medium skillet, cook the ground beef over medium-high heat, breaking it apart, until no longer pink (about 8-10 minutes). Drain off any excess fat.
  3. Layer Beef and Rice: Spread the cooked, drained ground beef evenly in the bottom of the prepared baking dish. Sprinkle the uncooked rice evenly over the beef.
  4. Add Soups and Mix Gently: Pour the French onion soup and beef consommé over the beef and rice. Gently stir just enough to evenly distribute the liquids and slightly combine the ingredients.
  5. Dot with Butter and Cover: Distribute the butter pats evenly over the top. Cover the baking dish tightly with aluminum foil.
  6. Bake Covered: Place the covered dish in the preheated oven and bake for 30 minutes.
  7. Bake Uncovered: Carefully remove the aluminum foil (watch for steam!). Return the uncovered dish to the oven and bake for an additional 30 minutes, until the rice is tender, most liquid is absorbed, and the top is becoming golden brown.
  8. Rest, Garnish, and Serve: Remove the casserole from the oven and let it rest, uncovered, for 5-10 minutes. Garnish with optional fresh chives and serve warm.
