For the Cracker Dough
- 1 cup all-purpose flour ((130 g))
- 1/2 cup whole wheat flour ((70 g) see note for swaps)
- 1 tsp granulated sugar ((4 g))
- 1 tsp kosher salt ((4 g))
- 1/4 tsp freshly ground black pepper
- 1/2 cup water ((125 ml))
- 3 Tbsp olive oil ((45 ml))
For the Toppings
- flaky sea salt (for sprinkling)

- seeds, chopped nuts, and/or chopped herbs (as desired)
Instructions
- Preheat & mix dough: Preheat oven to 400°F (200°C). In a large bowl, stir together all-purpose flour, whole wheat flour, sugar, kosher salt, and black pepper. Make a well; add water and olive oil. Stir until a shaggy, cohesive dough forms.
- Roll thin: Knead lightly for ~30 seconds to bring dough together. Place on parchment and roll as thinly and evenly as possible (about 1/8-inch / 3 mm). Transfer parchment with dough to a large baking sheet.
- Toppings: Lightly dampen hands and rub the dough surface. Sprinkle generously with flaky sea salt and any seeds, nuts, or herbs. Press gently to adhere. For neater pieces later, lightly score with a knife or pizza cutter.
- Bake: Bake 15–20 minutes until deep golden and very crisp (time varies by thickness).
- Cool & break: Cool completely on the sheet or a rack, then break into rustic, snack-sized pieces.
Notes
Note: Substitute whole wheat flour with other whole grains (spelt or rye) or use additional all-purpose flour. For ultra-crisp crackers, roll very thin and bake to a deep golden brown.
