Description

Sweet, smoky, and tangy bacon jam made with ripe tomatoes, crisp bacon, and a splash of apple cider vinegar. Spoon it over burgers, grilled cheese, eggs, or a charcuterie board—it's good on everything.

Ingredients

Units Scale

Tomato Bacon Jam

  • 1/2 lb smoked bacon (thick-cut recommended)
  • 2 lb ripe tomatoes, chopped (Roma or vine-ripened)
  • 1 yellow sweet onion, finely diced
  • 1 cup white sugar
  • 2 1/2 tbsp apple cider vinegar
  • 1 1/2 tsp salt
  • 1/4 tsp black pepper (freshly ground)
  • 1 dash hot pepper sauce (such as Tabasco®, to taste)

Instructions

  1. Cook the bacon to crispy perfection: In a large skillet over medium-high heat, cook the bacon for about 10 minutes, turning occasionally, until evenly browned and crisp. Transfer to a paper towel–lined plate; cool, then crumble.
  2. Sauté the onion: Pour off all but about 1 tablespoon of the bacon fat (save the rest for another use). Add the diced onion to the skillet and cook over medium heat until softened and translucent, 5–7 minutes.
  3. Combine jam ingredients and boil: In a large saucepan, combine chopped tomatoes, sautéed onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce. Bring to a boil over medium-high heat, stirring until the sugar dissolves.
  4. Add bacon and simmer low and slow: Stir in the crumbled bacon. Reduce heat to medium and simmer, stirring often, for about 1 hour, until thick and reduced. You should be able to drag a spoon across the pan and leave a clean trail.
  5. Season, cool, and store: Taste and adjust salt and pepper. Cool completely, then spoon into a clean 1-pint (2-cup) jar with a tight-fitting lid.

Notes

Storage: Refrigerate up to 2 weeks, or freeze up to 3 months. Serving ideas: burgers, grilled cheese, scrambled eggs, roasted vegetables, or a cheese board.
