Description
Sweet, smoky, and tangy bacon jam made with ripe tomatoes, crisp bacon, and a splash of apple cider vinegar. Spoon it over burgers, grilled cheese, eggs, or a charcuterie board—it's good on everything.

Tomato Bacon Jam
- 1/2 lb smoked bacon (thick-cut recommended)
- 2 lb ripe tomatoes, chopped (Roma or vine-ripened)
- 1 yellow sweet onion, finely diced
- 1 cup white sugar
- 2 1/2 tbsp apple cider vinegar
- 1 1/2 tsp salt
- 1/4 tsp black pepper (freshly ground)
- 1 dash hot pepper sauce (such as Tabasco®, to taste)
Instructions
- Cook the bacon to crispy perfection: In a large skillet over medium-high heat, cook the bacon for about 10 minutes, turning occasionally, until evenly browned and crisp. Transfer to a paper towel–lined plate; cool, then crumble.
- Sauté the onion: Pour off all but about 1 tablespoon of the bacon fat (save the rest for another use). Add the diced onion to the skillet and cook over medium heat until softened and translucent, 5–7 minutes.
- Combine jam ingredients and boil: In a large saucepan, combine chopped tomatoes, sautéed onion, sugar, apple cider vinegar, salt, black pepper, and hot sauce. Bring to a boil over medium-high heat, stirring until the sugar dissolves.
- Add bacon and simmer low and slow: Stir in the crumbled bacon. Reduce heat to medium and simmer, stirring often, for about 1 hour, until thick and reduced. You should be able to drag a spoon across the pan and leave a clean trail.
- Season, cool, and store: Taste and adjust salt and pepper. Cool completely, then spoon into a clean 1-pint (2-cup) jar with a tight-fitting lid.
Notes
Storage: Refrigerate up to 2 weeks, or freeze up to 3 months. Serving ideas: burgers, grilled cheese, scrambled eggs, roasted vegetables, or a cheese board.
