For the Honey Lime Chicken

  • 2 boneless, skinless chicken breasts (sliced into strips)
  • 2 Tbsp golden honey
  • 2 Tbsp soy sauce (or tamari)
  • 2 Tbsp fresh lime juice
  • 1 tsp fresh lime zest
  • 1 Tbsp olive oil
  • salt and freshly ground black pepper (to taste)

For the Avocado Rice Stacks

  • 2 cups cooked jasmine rice
  • 1-2 ripe avocados, sliced
  • fresh lime wedges (for garnish)
  • 2 Tbsp freshly chopped cilantro or chives
  • 1 tsp toasted sesame seeds (optional)

Instructions

  1. Make the marinade: In a bowl, whisk honey, soy sauce, lime juice, lime zest, olive oil, salt, and pepper. Add chicken strips and toss to coat. Marinate at least 20 minutes.
  2. Cook the chicken: Heat a large skillet over medium-high. Cook chicken in a single layer 3–4 minutes per side until caramelized and cooked through. Work in batches to avoid overcrowding. Keep warm.
  3. Mold the rice: Pack cooked jasmine rice tightly into a ramekin/bowl or measuring cup. Invert onto a plate to unmold a neat cylinder. Top with sliced avocado.
  4. Assemble & serve: Pile warm honey-lime chicken over avocado. Drizzle any pan juices on top. Garnish with cilantro or chives, sesame seeds (optional), and a lime wedge. Serve immediately.

Notes

Pro tip: For extra gloss, whisk 1 tsp cornstarch into 2 Tbsp water and simmer in the skillet with leftover marinade for 1 minute. Spoon the glaze over the stacks.
