Instructions
Mix & Form Patties:
- In a mixing bowl, combine ground beef, light mayo, taco seasoning, ranch dressing, salsa, salt, pepper, and cumin.
- Gently mix until just combined. Divide into 4 equal portions and shape into ½-inch-thick patties.
Preheat & Toast Tortillas:
- Heat a dry skillet or griddle over medium heat.
- Warm each tortilla for 15–20 seconds per side until pliable. Stack and keep warm.
Cook the Patties:
- Wipe skillet clean, add butter, and let it melt.
- Increase heat to medium-high. Add patties and cook 4–5 minutes per side for medium doneness.
- In the last minute, top each patty with shredded cheddar; cover pan briefly to melt cheese.
Assemble Quesadilla Burgers:
- Place one cheese-topped patty on a warmed tortilla. Top with shredded lettuce and pico de gallo.
- Cover with a second tortilla, pressing gently.
Final Toast:
- Return assembled quesadilla burgers to skillet. Toast 1–2 minutes per side until golden and slightly crispy.
