Instructions
Season and Cook the Shrimp:

- While the shrimp cooks, warm the corn tortillas in a microwave (wrapped in a damp paper towel) or in a dry skillet over medium heat until pliable.
Prepare the Lime Crema:
- In a small bowl, whisk together the Greek yogurt, lime juice, and a pinch of salt until smooth. Adjust the lime juice to reach your desired tanginess.
Assemble the Tacos:
- Place a few shrimp on each warmed tortilla. Top with a generous handful of shredded cabbage slaw and avocado slices. Drizzle with the lime crema and garnish with fresh cilantro and crumbled cheese, if using.
- Serve with extra lime wedges on the side.
Notes
- For added heat, sprinkle a few dashes of hot sauce on the shrimp while cooking.
- Feel free to customize the slaw with additional vegetables like jicama or radishes.
- These shrimp tacos are best enjoyed fresh; however, any leftovers can be refrigerated and served cold or at room temperature.
- For a low-carb version, serve the shrimp and slaw over a bed of lettuce instead of tortillas.
