Perfect for busy weeknights or a cozy family dinner, it’s a versatile dish that brings together simple ingredients into a robust, crowd-pleasing entrée.

Ingredients

Units Scale
  • 1 lb Ground beef (90% lean recommended)
  • 3 medium Potatoes (Peeled and cut into 1-inch cubes)
  • 1 large Onion (Diced)
  • 2 cloves Garlic (Minced)
  • 1 cup Beef broth (Low-sodium preferred)
  • 1/2 cup Diced tomatoes (With juices canned)
  • 1 tsp Paprika (Smoked paprika adds extra flavor)
  • 1/2 tsp Dried thyme
  • To taste: Salt and pepper
  • 2 tbsp Olive oil (For cooking)

Instructions

Prepare Ingredients:

  1. Peel and cube the potatoes, dice the onion, and mince the garlic.
  2. If using additional vegetables, prepare them similarly.

Brown the Beef:

  1. In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
  2. Add the ground beef, season lightly with salt and pepper, and cook until browned, breaking it up with a spatula. Drain excess fat if necessary.

Sauté Vegetables:

  1. Add the diced onion and minced garlic to the beef. Sauté for 2–3 minutes until the onion softens.
  2. Stir in the cubed potatoes (and additional vegetables, if using).

Simmer and Cook:

  1. Pour in the beef broth and add the canned diced tomatoes with their juices.
  2. Stir in the smoked paprika, dried thyme, and adjust salt and pepper to taste.
  3. Bring the mixture to a simmer, then reduce heat to low. Cover and cook for 25–30 minutes, or until the potatoes are tender and the flavors meld together. Stir occasionally to prevent sticking.
  4. If the stew becomes too thick, add a splash more broth or water as needed.

Finish and Serve:

  1. Once the potatoes are fork-tender, remove the dish from heat.
  2. Garnish with freshly chopped parsley if desired, and serve hot.

Notes

  • For added depth of flavor, consider browning the potatoes separately before adding them to the stew.
  • This dish can be easily customized—add your favorite root vegetables or greens to boost its nutritional profile.
  • Serve with a side of crusty bread or a light salad for a complete, satisfying meal.

Enjoy your Ground Beef and Potatoes—a hearty, comforting dinner that’s as easy to make as it is delicious!
