Ingredients
- 1 lb Ground beef (90% lean recommended)
- 3 medium Potatoes (Peeled and cut into 1-inch cubes)
- 1 large Onion (Diced)
- 2 cloves Garlic (Minced)
- 1 cup Beef broth (Low-sodium preferred)
- 1/2 cup Diced tomatoes (With juices canned)
- 1 tsp Paprika (Smoked paprika adds extra flavor)
- 1/2 tsp Dried thyme
- To taste: Salt and pepper
- 2 tbsp Olive oil (For cooking)
Instructions
Prepare Ingredients:
- Peel and cube the potatoes, dice the onion, and mince the garlic.
- If using additional vegetables, prepare them similarly.
Brown the Beef:
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat.
- Add the ground beef, season lightly with salt and pepper, and cook until browned, breaking it up with a spatula. Drain excess fat if necessary.
Sauté Vegetables:
- Add the diced onion and minced garlic to the beef. Sauté for 2–3 minutes until the onion softens.
- Stir in the cubed potatoes (and additional vegetables, if using).
Simmer and Cook:
- Pour in the beef broth and add the canned diced tomatoes with their juices.
- Stir in the smoked paprika, dried thyme, and adjust salt and pepper to taste.
- Bring the mixture to a simmer, then reduce heat to low. Cover and cook for 25–30 minutes, or until the potatoes are tender and the flavors meld together. Stir occasionally to prevent sticking.
- If the stew becomes too thick, add a splash more broth or water as needed.
Finish and Serve:
- Once the potatoes are fork-tender, remove the dish from heat.
- Garnish with freshly chopped parsley if desired, and serve hot.
Notes
- For added depth of flavor, consider browning the potatoes separately before adding them to the stew.
- This dish can be easily customized—add your favorite root vegetables or greens to boost its nutritional profile.
- Serve with a side of crusty bread or a light salad for a complete, satisfying meal.
Enjoy your Ground Beef and Potatoes—a hearty, comforting dinner that’s as easy to make as it is delicious!
