  • 2 cups water or cherry juice (use juice from canned cherries for extra flavor)
  • 3 Tbsp cornstarch (cornflour) (adjust for desired thickness)
  • 1 tsp vanilla extract (pure vanilla)
  • 4 Tbsp sugar (adjust to taste)

For the Fluffy Whipped Cream

  • 1 cup heavy (whipping) cream, well-chilled
  • 1 tsp vanilla extract
  • 4 Tbsp sugar

For Assembling the Sundae

  • 4 scoops vanilla ice cream (classic base)
  • 4 scoops chocolate ice cream (rich cocoa contrast)
  • 4 tsp chocolate shavings or sprinkles (for garnish)
  • 4 fresh cherries (optional) (for topping)

Instructions

  1. Make the cherry compote: If using canned cherries, drain and reserve the juice. Measure 2 cups (500 ml) liquid using cherry juice + water as needed. In a small bowl, whisk cornstarch, sugar, and vanilla into about 6 Tbsp of the cool liquid to make a smooth slurry.
  2. Bring the remaining liquid to a boil in a small saucepan. Remove from heat and whisk in the slurry until smooth. Return to medium heat and whisk 1–2 minutes until thick and glossy. Gently stir in cherries to warm through; set aside.
  3. Whip the cream: In a tall bowl, beat chilled cream with vanilla and sugar. Start low, then increase speed until soft peaks form. Refrigerate until assembly.
  4. Assemble the sundaes: In 4 dessert glasses, spoon a layer of warm cherry compote, add a scoop of vanilla ice cream, more compote, then a scoop of chocolate ice cream. Top with a dollop of whipped cream, chocolate shavings, and a fresh cherry. Serve immediately.
