  • 2 Tbsp cream-style horseradish sauce
  • 1 Tbsp ketchup
  • 1/3 tsp paprika
  • 1/3 tsp cayenne pepper

  • 1/8 tsp dried oregano
  • 1 pinch ground black pepper

For the Crispy Coating

  • 1 cup milk
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 1/2 tsp salt
  • 1 1/2 tsp cayenne pepper
  • 1 tsp paprika
  • 1/2 tsp ground black pepper
  • 1/8 tsp dried oregano
  • 1/8 tsp dried thyme
  • 1/8 tsp ground cumin

For the Onion

  • 1 large sweet onion (e.g., Vidalia)
  • 3/4 cup vegetable oil, for frying (or enough to cover)

Instructions

  1. Mix the dipping sauce: In a bowl, combine mayonnaise, horseradish, ketchup, paprika, cayenne, salt, oregano, and black pepper until smooth. Cover and chill until serving.
  2. Prepare wet & dry coatings: In one bowl, whisk milk with egg. In another bowl, whisk flour with salt, cayenne, paprika, black pepper, oregano, thyme, and cumin.
  3. Cut the onion for blooming: Trim ~1 inch from top and bottom; peel. Core a 1-inch circle from the top, leaving root intact. Slice downward to create 16 even cuts, then gently separate petals.
  4. Double-batter: Dip onion in milk-egg mixture (get between petals). Let excess drip, then coat thoroughly in seasoned flour. Repeat dip and flour for an extra-crispy crust.
  5. Fry: Heat oil to 350°F (175°C) in a deep fryer or heavy pot. Carefully lower onion, cut-side up, into the oil and fry about 10 minutes until deep golden and crisp.
  6. Drain & serve: Lift onto a wire rack or paper towels to drain. Open the center slightly, place a small bowl of sauce inside, and serve immediately while hot and crispy.

Notes

Timing: Total time is about 30 minutes. Oil temperature matters: 350°F/175°C ensures a crisp exterior without greasy results. If too cool, onion absorbs oil; if too hot, exterior burns before interior cooks.
