Units Scale
  • 500 g Boneless chicken breast/thighs (Cut into bite-sized pieces)
  • To taste Salt (For seasoning)
  • To taste Ground black pepper (For seasoning)
  • 1 tbsp Olive oil (For cooking)
  • 1/3 cup Honey
  • 2 Chipotle peppers in adobo (Minced adjust for heat; use 1 pepper for milder flavor)
  • 2 cloves Garlic (Minced)
  • 1 Lime (Juiced about 2 tbsp of lime juice)
  • 2 cups Cooked rice (Brown or white as preferred)
  • 1 medium Red bell pepper (Sliced into strips)
  • 1 cup Corn kernels (Fresh or frozen thawed)
  • 1 Avocado Diced (for topping)

Optional: 1/2 cup Black beans Drained and rinsed

  • A handful Fresh cilantro Chopped (for garnish)

Instructions

Marinate the Chicken:

  1. In a mixing bowl, combine the minced chipotle peppers, honey, minced garlic, lime juice, salt, and pepper.
  2. Add the chicken pieces and toss to coat. Let marinate for at least 10 minutes while you prepare the rice and vegetables.

Cook the Chicken:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the marinated chicken and cook for 6–8 minutes, stirring occasionally, until the chicken is fully cooked and nicely glazed with the honey chipotle sauce. Remove from heat.

Prepare the Rice and Vegetables:

  1. Ensure the rice is cooked and kept warm.
  2. While the chicken cooks, slice the red bell pepper, thaw the corn if needed, and dice the avocado. If using black beans, have them ready.

Assemble the Rice Bowls:

  1. Divide the cooked rice evenly among four bowls.
  2. Top each bowl with the honey chipotle chicken, then add red bell pepper strips, corn, black beans (if using), and diced avocado.
  3. Garnish with chopped fresh cilantro. Drizzle any remaining sauce from the skillet over the bowls for an extra burst of flavor.

Notes

  • Adjust the number of chipotle peppers to suit your desired heat level—start with one if you prefer milder flavor.
  • For extra crunch and nutrition, consider adding shredded carrots or a handful of spinach.
  • This dish pairs wonderfully with a simple green salad or a light Asian slaw for a complete, balanced meal.

Enjoy your Honey Chipotle Chicken Rice Bowls—a sweet, spicy, and wholesome meal that brings bold flavors and healthy goodness straight to your table!
