Description

These Turkey Dinner Muffins are the ultimate post-holiday hack. They’re savory, moist, and incredibly easy to whip up, transforming your leftovers into a brand-new meal that’s perfect for a quick breakfast, lunch, or snack. Each bite is a mini-feast containing tender turkey and rich gravy flavor, complete with a surprise dollop of cranberry sauce on top.

Ingredients

Units Scale
  • 1 3/4 cups All-Purpose Flour, spooned and leveled
  • 3 tablespoons Sugar
  • 3 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Poultry Seasoning
  • 1 Large Egg, room temperature
  • 3/4 cup Turkey Gravy (leftover or jarred)
  • 1/3 cup Canola Oil (or vegetable oil)
  • 3/4 cup Cooked Turkey, diced
  • 2 tablespoons Jellied Cranberry Sauce

Instructions

  1. Preheat and Prep: Preheat your oven to 400°F (200°C). Grease a standard 12-cup muffin tin with non-stick cooking spray or line with paper muffin cups.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and poultry seasoning.
  3. Mix Wet Ingredients: In a separate medium bowl, whisk together the egg, turkey gravy, and canola oil until smooth. (If gravy is thick, warm it slightly first).
  4. Combine and Fold: Pour the wet ingredients into the dry ingredients. Stir gently just until combined. Gently fold in the diced cooked turkey. Do not overmix.
  5. Fill and Top: Spoon the batter into the muffin cups, filling each about two-thirds full. Make a tiny indentation on top and add about ½ teaspoon of jellied cranberry sauce to each.
  6. Bake and Cool: Bake for 15-18 minutes, or until golden brown and a toothpick comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack. Serve warm.

Notes

  • Liner Tip: If using paper liners, give them a quick spritz of cooking spray too, as savory muffins can sometimes stick more than sweet ones.
  • Gravy Consistency: If your leftover gravy is very gelatinous from the fridge, warm it in the microwave for 10-15 seconds so it mixes easily into the batter.
  • Texture: Do not overmix the batter! Stop stirring as soon as the flour streaks disappear to ensure tender, fluffy muffins.
