Ingredients

Units Scale
  • 4 fillets Cod fillets (About 6 oz each; skin removed if desired)

To taste: Ground black pepper For seasoning the fish

  • 3 cloves Garlic (minced)
  • 1 Lemon: Zested and juiced (about 3 tbsp juice)
  • 4 tbsp Unsalted butter (Melted)
  • 2 tbsp Olive oil (For drizzling over the fish)
  • 1/4 cup Fresh parsley (chopped Or substitute with fresh dill if desired)

Instructions

Preheat and Season:

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. Pat the cod fillets dry with paper towels and season both sides generously with salt and black pepper.

Prepare the Lemon Butter Sauce:

  1. In a small saucepan over medium heat, melt the unsalted butter.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the lemon zest and lemon juice, and remove from heat.
  4. Mix in the chopped fresh parsley.

Bake the Cod:

  1. Place the seasoned cod fillets in the prepared baking dish.
  2. Drizzle the olive oil over the fillets, then pour the lemon butter sauce evenly on top.
  3. Optionally, lay a few lemon slices on top for extra visual appeal and flavor.
  4. Bake in the preheated oven for 15–20 minutes, or until the cod flakes easily with a fork.

Serve:

  1. Remove the fish from the oven and let it rest for a couple of minutes.
  2. Serve hot with a side of steamed vegetables, rice, or a fresh salad. Enjoy your refreshing, healthy dinner delight!

Notes

  • For an extra burst of flavor, consider adding a pinch of red pepper flakes to the sauce for a subtle kick.
  • Ensure the fish does not overcook to maintain its tender, flaky texture.
  • This dish pairs wonderfully with a crisp white wine or a light, citrus-infused iced tea.
