Instructions

Prepare the Cupcake Batter:

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, cream together the softened butter, peanut butter, and granulated sugar until light and fluffy using an electric mixer.
  3. Beat in the eggs one at a time, then add the vanilla extract.
  4. In another bowl, whisk together the sifted flour, baking powder, baking soda, and salt.
  5. Alternately add the dry ingredients and the milk to the butter mixture, beginning and ending with the flour mixture. Mix just until combined to avoid overmixing.

Bake the Cupcakes:

  1. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  2. Bake for 16–18 minutes or until a toothpick inserted into the center comes out clean.
  3. Remove from the oven and allow the cupcakes to cool in the tin for 5 minutes, then transfer to a cooling rack to cool completely.

Make the Peanut Butter Frosting:

  1. In a mixing bowl, beat the softened butter and cream cheese together until smooth.
  2. Gradually add the powdered sugar, beating until light and fluffy.
  3. Mix in the peanut butter and vanilla extract. Add milk a tablespoon at a time until the frosting reaches your desired consistency.

Assemble and Garnish:

  1. Once the cupcakes are completely cooled, frost them generously with the peanut butter frosting.
  2. Optional: Drizzle a small amount of chocolate syrup on top for extra indulgence.
  3. Enjoy these nutty treats that everyone will crave!

Notes

  • Ensure all ingredients (especially eggs and butter) are at room temperature for a smooth batter.
  • Do not overmix the batter to maintain a light and tender cupcake texture.
  • These cupcakes are best enjoyed fresh but can be stored in an airtight container at room temperature for 2 days or refrigerated for up to 4 days.
  • Experiment with adding a pinch of cinnamon to the batter for an extra flavor twist.
