Description
Classic Amish-style glazed carrots made effortless in the slow cooker. Tender coins simmer in a honey–butter–thyme glaze with a hint of cinnamon and a splash of apple cider vinegar for balance. A kid-friendly, holiday-worthy side you can set and forget.
Ingredients
Carrots
- 2 lb carrots, peeled and cut into 1-inch pieces (rounds or bias-cut)
Glaze
- 1/4 cup honey (raw or clover)
- 2 tbsp unsalted butter, melted
- 1 tbsp apple cider vinegar
- 1 tsp salt
- 1/2 tsp ground black pepper (freshly cracked preferred)
- 1/2 tsp dried thyme
- 1/4 tsp ground cinnamon
Garnish
- fresh parsley, chopped (optional)
Instructions
- Prep Carrots: Peel and cut carrots into uniform 1-inch pieces. Add to the slow cooker.
- Whisk Glaze: In a bowl, whisk honey, melted butter, apple cider vinegar, salt, pepper, dried thyme, and cinnamon until smooth.
- Coat & Cook: Pour glaze over carrots and toss to coat. Cover and cook on LOW 4–5 hours, until fork-tender. Stir once halfway through.
- Finish: Transfer to a serving dish and garnish with chopped fresh parsley. Serve warm.
Notes
For extra sheen, spoon the glaze from the bottom over the carrots just before serving. If you prefer a thicker glaze, stir in 1 tsp cornstarch mixed with 1 tsp water during the last 15 minutes on HIGH. Leftovers reheat well on the stovetop over low heat.
