  • 1 tsp Vanilla extract
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Salt

For the Cinnamon-Sugar Topping:

  • 2 tbsp Granulated sugar
  • 1 1/2 tsp Ground cinnamon

Instructions

Preheat and Prepare:

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×9-inch baking dish.

Prepare the Fruit Filling:

  1. In a mixing bowl, combine the berries, 1/2 cup granulated sugar, lemon juice, and 1/2 teaspoon ground cinnamon.
  2. Toss gently until the fruit is evenly coated.
  3. Spread the fruit mixture evenly in the bottom of the prepared baking dish.

Make the Snickerdoodle Topping:

  1. In another bowl, combine the flour, 1/2 cup granulated sugar, baking powder, and salt.
  2. Add the cold, cubed butter and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs.
  3. In a separate small bowl, whisk together the egg and vanilla extract.
  4. Stir the egg mixture into the dry ingredients until just combined; the dough will be slightly sticky.
  5. In a small bowl, mix 2 tablespoons sugar with 1 1/2 teaspoons cinnamon for the topping.

Assemble and Bake:

  1. Drop spoonfuls of the snickerdoodle batter evenly over the fruit filling.
  2. Lightly dust the batter with the cinnamon-sugar mixture.
  3. Bake for 30–35 minutes, or until the topping is golden and a toothpick inserted in the center comes out mostly clean.
  4. Allow the cobbler to cool in the dish for about 10 minutes before serving.

Notes

  • For a variation, try using apples or peaches for the fruit filling instead of mixed berries.
  • The topping will be soft and cake-like—if you prefer a crisper texture, bake a few extra minutes until lightly browned.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.

Enjoy your Snickerdoodle Cobbler—a perfect dessert that melds the classic flavors of cinnamon rolls with the comforting charm of a fruity cobbler, ideal for all cinnamon lovers!
