Description

What You’ll Need: A vibrant coconut-lime-chile marinade for ultra-juicy boneless, skinless chicken thighs, finished with fresh cilantro and lime. Most of the time is hands-off while the marinade works its magic.

For the Coconut Marinade

  • 1 fresh ginger (3-inch piece), peeled and chopped
  • 5 cloves fresh garlic
  • 3/4 cup full-fat coconut milk
  • 1/4 cup hot chili paste (sambal oelek)
  • 1/4 cup fresh lime juice
  • 2 Tbsp light brown sugar, packed
  • 1 Tbsp or 1 3/4 tsp kosher salt (Diamond Crystal or Morton)
  • 2 Tbsp vegetable oil (plus more for grill)

For the Chicken & Serving

  • 2 lb boneless, skinless chicken thighs
  • 1/2 cup fresh cilantro leaves with tender stems (for garnish)
  • fresh lime wedges (for serving)

Instructions

  1. Make the marinade: In a blender/processor, combine ginger, garlic, coconut milk, chili paste, lime juice, brown sugar, salt, and 2 Tbsp oil. Blend until completely smooth and creamy.
  2. Marinate the chicken: Add chicken thighs to a bowl or zip bag. Reserve one-third of the marinade for serving; pour the remaining marinade over chicken and toss to coat. Marinate 30 minutes at room temp or up to 4 hours chilled.
  3. Prep the grill: Preheat to medium-high (200–230°C / 400–450°F). Clean and oil grates well so chicken won’t stick.
  4. Grill: Let excess marinade drip off. Grill chicken 6–8 minutes per side, turning once, until lightly charred and an instant-read thermometer reads 165°F (74°C) in the thickest part.
  5. Rest & serve: Rest 5–10 minutes. Warm the reserved (unused) marinade in a small saucepan to serve alongside. Garnish with cilantro and serve with lime wedges.

Notes

Pro tip: Reserve part of the marinade before it touches raw chicken to use as a sauce later. Adjust heat by adding more or less chili paste. Char adds flavor, but avoid flare-ups by keeping the grill at medium-high and moving pieces as needed.
