Ingredients
- 2 lb chicken wings, flats and drumettes
- 1 cup Classic Coca-Cola
- 2 Tbsp soy sauce
- 2 Tbsp rice wine
- 3 slices fresh ginger (thinly sliced)
- 2 Tbsp cooking oil
- 2 green onions, sliced (for garnish)
Instructions
- Prep wings: If whole, separate wings into flats and drumettes (save tips for stock). Toss wing pieces with 2 Tbsp soy sauce until evenly coated.
- Sear for color: Heat oil in a wok or large skillet over medium‑high until shimmering. Add wings in a single layer (work in batches if needed) and sear ~3 minutes per side until golden brown.
Pro Tip: Don’t overcrowd the pan or the wings will steam, not sear. - Build the glaze: Pour in Coca‑Cola, add rice wine and ginger. Stir to combine and scrape up browned bits. Bring to an active simmer.
- Simmer & reduce: Lower to medium‑low and cook 20–25 minutes, stirring occasionally, until the liquid reduces to a thick, sticky glaze that coats the wings.
- Garnish & serve: Remove ginger slices if desired. Pile wings on a platter and shower with sliced green onions. Serve hot and sticky.
Notes
For extra lacquered wings, reduce a few minutes longer, stirring often. Prefer spicier? Add red pepper flakes or a chopped fresh chili with the Coke.
