For the Apple Dapple Cake
- 3 cups all-purpose flour (about 12 3/4 oz., spooned & leveled)
- 2 tsp ground cinnamon
- 1 1/2 tsp kosher salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground nutmeg
- 2 cups granulated sugar
- 1 1/2 cups canola oil
- 1 Tbsp pure vanilla extract
- 3 large eggs
- 3 large Gala apples, finely chopped (about 3 1/2 cups)
- 1 cup toasted chopped pecans
- baking spray with flour (for the pan)
For the Caramel Glaze
- 1 cup light brown sugar, packed
- 3/4 cup unsalted butter, softened (6 oz.)
- 1/4 cup heavy whipping cream
- 1/2 tsp kosher salt
Instructions
- Preheat & prep pan: Heat oven to 350°F (175°C). Generously grease a 12-cup Bundt pan with baking spray containing flour, coating every crevice.
- Mix dry & wet: In a medium bowl, whisk flour, cinnamon, salt, baking powder, baking soda, and nutmeg. In a separate large bowl, mix sugar, oil, vanilla, and eggs; beat on medium 2–3 minutes until lighter in color.
- Fold in apples & pecans: Add dry mixture to wet on low speed just until no dry streaks remain. Gently fold in chopped apples and toasted pecans.
- Bake: Spread thick batter evenly in pan. Bake 1 hour 10 minutes to 1 hour 15 minutes, until a skewer inserted in center comes out clean. Cool in pan on a rack 10 minutes.
- Make caramel glaze: In a saucepan, combine brown sugar, softened butter, cream, and salt. Bring to a boil over medium heat, whisking constantly. Boil 2 minutes; remove from heat.
- First soak (ultra-moist secret): While cake is warm in the pan, poke holes all over with a wooden skewer. Pour about 3/4 cup hot glaze evenly over cake. Let stand 15 minutes to soak; keep remaining glaze covered and warm.
- Invert, cool & finish: Invert cake onto a wire rack; cool completely (~2 hours). Gently warm remaining glaze until pourable and drizzle over cooled cake.
Notes
For neat slices, chill 20 minutes after glazing to set. Prefer tarter apples? Swap some Gala for Honeycrisp or Granny Smith. Add 1 tsp vanilla to the glaze for extra depth.
