Instructions
- Season & sear chicken: Pat cutlets dry. Season with 1/8 tsp salt and 1/8 tsp pepper. Heat 1 Tbsp olive oil in a large skillet over medium-high until shimmering. Sear chicken 3–4 minutes per side until golden and cooked through. Transfer to a plate.
- Sauté vegetables: Add remaining 1 Tbsp oil to the skillet. Add corn, chopped tomato, and grated garlic. Cook, stirring, about 2 minutes until tomatoes start to break down and garlic is fragrant.
- Deglaze: Increase heat to high. Pour in white wine and scrape up browned bits (fond) with a wooden spoon. Simmer ~2 minutes until mostly reduced.
- Creamy finish: Reduce heat to medium. Stir in sour cream and any juices from the chicken plate plus remaining 1/8 tsp salt and 1/8 tsp pepper. Simmer gently 2 minutes until slightly thickened (avoid a hard boil to prevent curdling).
- Assemble & serve: Return chicken to skillet and stir in chopped basil. Turn cutlets to coat in sauce. Garnish with snipped chives if desired and serve.
