Decadent, fudgy balls studded with chopped Cherry Ripe bars and rolled in coconut—ready in just 10 minutes of hands-on time. No oven required, these bite-sized treats are perfect for lunchboxes, parties, or a sweet snack any time.
Ingredients
- 390 gram tin (Sweetened condensed milk)
- 250 grams Marie biscuits finely crushed (About 3 cups crumbs)
- 2 Tbsp Cocoa powder
- 1/4 cup 45 g Desiccated coconut (For the base)
- 3 × 52 gram Cherry Ripe bars roughly chopped
- 1/2 cup Desiccated coconut (Extra for rolling)
Instructions
Crush the Biscuits
- Place Marie biscuits in a zip-top bag and crush with a rolling pin (or pulse in a food processor) until fine. Transfer to a large bowl.
- Place biscuits in the Thermomix bowl. Turbo 2 sec × 2 until fine. Remove to a bowl.
Combine the Base
- Add condensed milk, cocoa powder, and ¼ cup desiccated coconut to the crumbs. Stir in chopped Cherry Ripe bars until evenly mixed. The mixture will be thick and sticky.
Portion & Roll
- Scoop heaping tablespoons of mixture and roll into tight balls with lightly moistened hands (or chill 15 minutes if too sticky).
Coat & Chill
- Spread the remaining ½ cup coconut on a plate. Roll each ball to coat. Arrange on a tray and refrigerate at least 30 minutes to set.
Mix the Base
- Add condensed milk, cocoa, ¼ cup coconut, and Cherry Ripe pieces. Mix 10 sec/Speed 4.5/Reverse. Scrape down sides. Mix 10 sec/Speed 5/Reverse.
Roll & Chill
- Proceed with Standard Method Steps 3–4 above.
