Ingredients

  • 1/2 tsp Lemon zest
  • 1/3 cup Fresh lemon juice
  • 1/3 cup Olive oil
  • 1 Tbsp Poppy seeds
  • 2 Tbsp Mayonnaise or Greek yogurt
  • 2 Tbsp Dijon mustard
  • 2 Tbsp Honey or maple syrup
  • 1 small Clove garlic (minced)
  • 1/4 tsp Fine salt
  • Fresh cracked black pepper (to taste)

Instructions

Combine the Base:

  1. In a medium bowl, whisk together the lemon zest, lemon juice, mayonnaise (or Greek yogurt), Dijon mustard, honey (or maple syrup), garlic, and salt until smooth.

Emulsify:

  1. Slowly drizzle in the olive oil while whisking constantly, creating a creamy, emulsified dressing.
  2. Add Poppy Seeds & Season
  3. Stir in the poppy seeds.
  4. Taste and adjust with black pepper or a pinch more salt if needed.

Serve or Store:
