- 1/2 tsp Lemon zest
- 1/3 cup Fresh lemon juice
- 1/3 cup Olive oil
- 1 Tbsp Poppy seeds
- 2 Tbsp Mayonnaise or Greek yogurt
- 2 Tbsp Dijon mustard
- 2 Tbsp Honey or maple syrup
- 1 small Clove garlic (minced)
- 1/4 tsp Fine salt
- Fresh cracked black pepper (to taste)
Instructions
Combine the Base:
- In a medium bowl, whisk together the lemon zest, lemon juice, mayonnaise (or Greek yogurt), Dijon mustard, honey (or maple syrup), garlic, and salt until smooth.
Emulsify:
- Slowly drizzle in the olive oil while whisking constantly, creating a creamy, emulsified dressing.
- Add Poppy Seeds & Season
- Stir in the poppy seeds.
- Taste and adjust with black pepper or a pinch more salt if needed.
Serve or Store:
- Use immediately, or refrigerate in a sealed jar for up to 1 week. Shake or whisk before serving if it separates.
