This Pecan Pie Bark uses crisp graham crackers as a base topped with a bubbling, buttery brown sugar toffee and loads of toasted pecans. It’s a sweet and salty masterpiece perfect for holiday gifting or satisfying a pie craving fast.

  • 17 sheets Graham Crackers (approx. 1 sleeve + more)
  • 1 1/2 cups Light Brown Sugar, packed
  • 1 1/2 cups Unsalted Butter (3 sticks)
  • 2 1/2 cups Chopped Pecans
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 teaspoon Salt

Instructions

  1. Prepare the Pan: Preheat your oven to 350°F (175°C). Line a large rimmed baking sheet (jelly roll pan) completely with aluminum foil and spray liberally with non-stick cooking spray. Arrange graham crackers in a single layer to cover the entire bottom, breaking pieces to fit if necessary.
  2. Make the Caramel Sauce: In a medium saucepan over medium heat, combine the butter, brown sugar, and chopped pecans. Cook, stirring constantly, until the butter is melted and the mixture comes to a soft boil.
  3. Boil: Once bubbling, continue to cook and stir constantly for exactly 2 minutes.
  4. Add Flavor: Remove saucepan from heat. Immediately stir in the vanilla extract and salt.
  5. Spread and Bake: Carefully pour the hot pecan mixture evenly over the graham crackers, spreading it to the edges. Bake for 10 minutes, until the topping is bubbling vigorously all over.
  6. Cool and Break: Remove from oven and place on a wire rack. Let sit completely undisturbed for 1-2 hours until fully cooled and hardened. Lift the foil out of the pan and break the bark into jagged pieces.

  • The 2-Minute Rule: Timing is key! Boiling the sugar mixture for exactly 2 minutes ensures the sugar dissolves and caramelizes properly without burning.
