Instructions

Heat the Base:

  1. In a large saucepan over medium heat, melt the butter.
  2. Add the heavy cream, whole milk, sugar, salt, and pepper; stir until just warmed through.

Make the Roux:

  1. Whisk the flour into the cream mixture in a small bowl or measuring cup to form a smooth slurry.
  2. Slowly pour the slurry back into the saucepan, whisking constantly to avoid lumps.

Simmer & Thicken:

  1. Bring the mixture to a gentle simmer, whisking, until it begins to thicken (about 2–3 minutes).

Add the Corn:

  1. Stir in the thawed corn kernels and reduce heat to medium-low.
  2. Cook, stirring often, until the corn is heated through and fully coated by the creamy sauce (5–7 minutes).

Finish with Cheese:

  1. Remove from heat and stir in the Parmesan cheese until melted and the sauce is silky.

Serve:

  1. Spoon into a warm serving dish and top with an extra sprinkle of Parmesan if desired.
