Funfetti Frosting

  • 1/2 cup unsalted butter or vegan baking stick (room temperature)
  • 4 cups confectioners' sugar (aka powdered sugar)
  • 2 tsp pure vanilla extract
  • 1/4 cup water (room temperature; add to desired consistency)
  • 1 cup rainbow sprinkles (jimmies) (best for color without bleeding)

Instructions

  1. Cream the butter: In a large bowl with a stand mixer or hand mixer, beat the room-temperature butter (or vegan baking stick) on medium-high for about 2 minutes until smooth, pale, and creamy.
  2. Add sugar & vanilla: Reduce speed to low. Add confectioners’ sugar gradually, 1 cup at a time, to avoid a sugar cloud. Mix in vanilla; scrape bowl as needed.
  3. Adjust consistency: With mixer on low, drizzle in water a little at a time until thick, creamy, and spreadable. You may not need it all.
  4. Fold in the fun: Remove bowl from mixer. Using a spatula, gently fold in rainbow sprinkles until evenly distributed to prevent color bleeding.
