Instructions

  1. Preheat & prep peaches: Heat oven to 350°F (175°C). Line two large cookie sheets with parchment. Dice peaches into 1/4-inch pieces and gently pat dry; measure about 1 cup.
  2. Cream butter & sugars: In a large bowl with a mixer, beat butter, brown sugar, and granulated sugar on medium for 2–3 minutes until light and fluffy.
  3. Add egg & vanilla: Mix in egg and vanilla just until combined.
  4. Combine dry ingredients: In a separate bowl, whisk flour, sea salt, cinnamon, and baking powder. On low speed, add to wet ingredients just until a soft dough forms; do not overmix.
  5. Fold in mix-ins: Using a spatula, gently fold in peaches, pecans, and white chocolate chips. Dough will be thick and chunky.
