For the Bowl Assembly

  • 2 cups cottage cheese (full-fat for creamiest)
  • 2 avocados, cubed or sliced
  • 4 Tbsp hot honey (or to taste)

Instructions

  1. Air fry sweet potatoes: Toss cubes with oil, salt, pepper, and cinnamon (if using). Air fry at 200°C/400°F for 10–15 minutes, shaking halfway, until golden and crisp outside, tender inside. Do not overcrowd for best crisp.
  2. Cook taco-spiced beef: In a large skillet over medium-high, brown ground beef, breaking into crumbles. Stir in tomato paste and taco seasoning; cook until fully browned and seasoned. Set aside.
  3. Assemble bowls: Divide crispy sweet potatoes and taco beef among 4 bowls.
  4. Finish & drizzle: Top each with about 1/2 cup cottage cheese and avocado. Drizzle generously with hot honey and serve immediately.
