Cook the Noodles: Cook the 8 oz of noodles according to the package directions. Drain well and set aside.
Make the Sauce: In a small bowl, whisk together the 1/4 cup soy sauce, 2 tbsp brown sugar, 2 tbsp hoisin sauce, and the minced garlic. Set aside.
Brown the Beef: In a large skillet or wok over medium-high heat, cook the 1 lb of ground beef, breaking it up with a spoon, until browned and no longer pink. Drain any excess fat.
Thicken Sauce: Pour the prepared sauce mixture over the browned beef. Cook for 1-2 minutes, stirring constantly, until the sauce has thickened slightly.
Combine: Add the cooked noodles to the skillet. Toss everything together until the noodles are well coated and heated through.
Finish: Remove from heat and stir in the 1 tbsp of sesame oil.
