  • 1 ripe medium banana (the spottier the better)
  • 1 cup unsweetened coconut flakes
  • 1/4 cup sugar-free chocolate chips (melted, for drizzling; regular chips work too)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mash the banana well with a fork until smooth, then mix with the coconut flakes until evenly combined.
  3. Shape the mixture into small cookies on the prepared sheet. They won’t spread much, so form them into the shape you want.
  4. Bake 12-15 minutes, until lightly golden. Let cool a few minutes to firm up.
  5. Melt the chocolate chips, drizzle over the cooled cookies, let set, and enjoy.

Notes

Use a very ripe, spotty banana — it’s sweeter and binds better. Unsweetened coconut keeps these low in sugar; the banana provides the sweetness. These are soft and delicate (no flour or egg), so cool them fully before handling. Optional add-ins: vanilla, a pinch of salt, cinnamon, or a spoonful of nut butter for a sturdier cookie. Best within a day or two; store airtight in the fridge for a few days, or freeze. Skip the chocolate for an even simpler cookie.
