Dressing

  • 0.5 cup plain yogurt
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp lemon zest (grated)
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 0.125 tsp cayenne pepper

Salad Mix-ins

  • 2 cups cooked chicken breast (shredded)
  • 0.5 cup celery (chopped)
  • 0.25 cup green onions (chopped)
  • 3 tbsp fresh parsley (chopped)
  • 2 tbsp raisins
  • 2 tbsp sliced almonds (oven-roasted)

Instructions

  1. Make Dressing: In a large bowl, whisk together yogurt, lemon juice, oil, mustard, lemon zest, salt, pepper, and cayenne pepper.
  2. Combine: Add cooked chicken, celery, green onion, parsley, raisins, and almonds. Stir to combine thoroughly.

Notes
