  • 1 cup flour
  • 1 tbsp sugar
  • 1 tbsp cinnamon (or more to taste)

  • 1 pinch salt

  • 1 tsp vanilla extract
  • 0.66 cup milk
  • 1 large egg (separated)
  • 1 tbsp butter (for cooking)

Instructions

  1. Combine Dry Ingredients: In a medium bowl, combine flour, sugar, cinnamon, baking powder, and 1 pinch of salt.
  2. Prepare the Egg: Separate the egg yolk and egg white. Add the egg yolk to the dry ingredients. Whisk the egg white in a separate bowl until foamy.
  3. Prep Apple: Slice the peeled apple into thin strips or grate it.
  4. Make Batter: Combine the dry ingredients/yolk mixture with the apple, vanilla extract, and milk. Mix, then fold in the foamy egg white to create a homogenous batter.
  5. Cook: To a large pan, add 1 tbsp butter and heat on medium-high. Add the batter (about 3 tbsp per pancake) and cook for 2 min per side until golden.

Notes

Separating the egg and whisking the white is key to fluffy pancakes. Ensure your pan is hot enough before adding batter.
