Units Scale

Bread Base

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup quick-cooking oats
  • 0.5 tsp salt
  • 0.5 cup white granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 0.25 cup sour cream
  • 0.5 cup butter (melted (1 stick))
  • 1 tsp vanilla extract
  • 0.75 cup raisins (up to 1 cup)

Cinnamon Swirl

  • 0.5 cup brown sugar
  • 1 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 0.5 cup nut pieces (pecans or walnuts, optional)

Vanilla Glaze

  • 0.75 cup powdered sugar
  • 3 tbsp milk (3-4 tablespoons)
  • 0.5 tsp vanilla extract

Instructions

  1. Prepare Dry Ingredients: Preheat oven to 350°F. Spray a 9×5 inch loaf pan. Whisk together flour, baking powder, baking soda, oats, and salt in a large bowl.
  2. Mix Wet Ingredients: Cream sugar and eggs together. Add buttermilk, sour cream, melted butter, and vanilla. Beat with mixer until smooth and combined.
  3. Combine and Add Raisins: Pour wet ingredients into flour mixture and stir until just combined. Fold in raisins gently.
  4. Make Swirl Mixture: In a small bowl, combine brown sugar, cinnamon, nutmeg, and optional nuts.
  5. Create the Swirl: Pour batter into prepared pan. Spread swirl mixture over the top and cut into the batter with a knife, swirling throughout in a figure-eight motion.
  6. Bake: Bake for 65-70 minutes until a toothpick inserted in center comes out clean. Let cool in pan 10 minutes, then transfer to wire rack.
  7. Make Glaze and Finish: Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled bread and serve.

Notes

Don’t overmix the batter—a few lumps are fine and will result in more tender bread. Make sure to really swirl the cinnamon mixture down into the batter for beautiful ribbons throughout. Let the bread cool completely before glazing for best results.
