This creamy, cheesy Knorr Broccoli Cheese Chicken Casserole is the ultimate weeknight dinner solution! Made with Knorr Broccoli & Cheese Rice Sides, tender chicken, nutritious broccoli, and gooey melted cheddar, it’s ready in just 30 minutes and the whole family will love it.

Main Ingredients

  • 1 package Knorr Rice Sides - Broccoli & Cheese
  • 2 cups cooked chicken (shredded or diced)
  • 1 cup broccoli (chopped, fresh or frozen)
  • 1.5 cups shredded cheddar cheese
  • 10.5 oz cream of chicken soup (1 can)
  • 0.5 cup milk
  • 2 tbsp butter

Optional Seasonings

  • to taste garlic powder (optional)
  • to taste salt and pepper (optional)

Instructions

  1. Preparation: Preheat your oven to 375°F (190°C). Grease a 9×13-inch casserole dish to prevent sticking.
  2. Cook the Rice: Prepare the Knorr Broccoli & Cheese Rice Sides according to package instructions, simmering with butter and water for about 7 minutes. Steam fresh broccoli or thaw and drain frozen broccoli while rice cooks.
  3. Combine Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, chopped broccoli, cream of chicken soup, milk, and half of the shredded cheddar cheese. Add garlic powder, salt, and pepper to taste, mixing until evenly combined.
  4. Bake: Transfer the mixture into the prepared casserole dish, spreading evenly. Sprinkle remaining cheddar cheese on top. Bake uncovered for 10 minutes, or until the cheese is melted and bubbly.

Notes

Use rotisserie chicken for extra convenience. For added crunch, sprinkle buttered breadcrumbs over the cheese before baking. Make sure to drain frozen broccoli thoroughly to prevent a watery casserole.
