Plump, golden-seared shrimp tossed in a luxurious butter, garlic, and white wine sauce with bright lemon and fresh parsley. Restaurant-quality shrimp scampi in under 20 minutes.

Ingredients

  • 1 1/2 pounds large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 tablespoons unsalted butter (divided)
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup dry white wine (or chicken broth)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh parsley, chopped
  • lemon wedges (for serving)

Instructions

  1. Get Those Shrimp Ready to Sear: Pat the shrimp dry with paper towels and season evenly with salt and black pepper.
  2. Sear Until Blushing and Beautiful: Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2 to 3 minutes per side, until pink and lightly golden. Remove from the skillet and set aside.
  3. Build That Iconic Butter-Garlic Base: Reduce heat to medium. Add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 30 seconds until fragrant, being careful not to brown the garlic.
  4. Bring the Heat: Stir in crushed red pepper flakes if using.
  5. Pour in the Wine: Add the white wine and simmer for 2 to 3 minutes, allowing it to reduce slightly and concentrate in flavor.
  6. The Lemon Moment: Stir in fresh lemon juice and lemon zest.
  7. Bring the Shrimp Home: Return the shrimp to the skillet and toss gently to coat in the sauce. Cook for 1 to 2 more minutes until heated through.
  8. Finish and Serve: Sprinkle with fresh parsley and serve immediately with lemon wedges.

Notes

For a richer sauce, add a splash of heavy cream. Stir in capers for a briny contrast. Toss with cooked pasta directly in the skillet for a complete meal.
