Soft Raspberry Pillow Cookies Recipe (Melt-in-Your-Mouth!)

Pillowy soft sandwich cookies filled with sweet-tart raspberry preserves. These melt-in-your-mouth cookies are easy to make and perfect for weekend baking projects.

Cookie Dough

  • 1 cup unsalted butter (room temperature (2 sticks))
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 tbsp pure vanilla extract
  • 1/2 tsp almond extract
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt

Filling

  • 1 cup sweet raspberry preserves

Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper.
  2. Cream butter, granulated sugar, and brown sugar with an electric mixer on medium-high until pale and fluffy, 2–3 minutes.
  3. Beat in eggs one at a time, scraping bowl as needed. Mix in vanilla and almond extracts until combined.
  4. In a separate bowl, whisk flour, baking powder, and salt. Add to wet ingredients in 3 additions on low speed, mixing just until combined.
  5. Form dough into a ball, wrap tightly in plastic, and chill 1–2 hours until firm.
  6. Let dough soften 15 minutes. On a lightly floured surface, roll to 1/4-inch thickness. Cut 2.5–3 inch rounds.
  7. Place half the rounds on the baking sheet. Spoon about 2 teaspoons raspberry preserves in the center of each.
  8. Lightly wet the edges with water. Top with remaining rounds and press edges to seal.
  9. Bake 9–10 minutes until puffed with lightly golden edges; centers will look soft.
  10. Cool 5 minutes on the sheet, then transfer to a wire rack to cool completely.

Notes

Yield may vary with cutter size (about 18 cookies shown). For extra sparkle, dust cooled cookies with confectioners’ sugar. Chill the dough well to keep cookies thick and pillowy.
