Tahini Cookies

Nutty, sweet tahini cookies with a crisp exterior and a soft, chewy interior, finished with a dusting of powdered sugar. Easy one-bowl cookies with a delicate sesame flavor — a sophisticated cousin to peanut butter cookies.

Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 14 tablespoons unsalted butter (1 stick + 6 tbsp, softened to room temperature)
  • 1 cup tahini (well-stirred)
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • powdered sugar (for garnish)

Instructions

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, use an electric mixer to beat the softened butter, tahini, vanilla, and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Gradually mix in the dry ingredients until well combined. If the dough is crumbly and not coming together, add 1-2 tablespoons of water.
  5. Scoop the dough into balls about 1 1/2 tablespoons in size and place on the prepared sheet, about 2 inches apart. Flatten each ball slightly into a disc.
  6. Bake 12-15 minutes, until the edges are golden brown. The cookies will spread slightly and crack on top; the centers should still be soft.
  7. Cool on the baking sheet a few minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar and store in an airtight container.

Notes

Stir the tahini well before measuring, as the oil separates in the jar. Use softened butter so it creams properly with the sugar and tahini. Tahini’s oiliness varies, so add 1-2 tablespoons water if the dough is crumbly. Pull the cookies while the centers are still soft — they firm up as they cool and overbaking makes them dry. Optional add-ins: sesame seeds on top, chocolate chips or a chocolate drizzle (chocolate and tahini pair well). Store airtight several days; re-dust with powdered sugar before serving. Freezes well (dust after thawing).
