Instructions
 

  • Preheat & prepare pan: Heat oven to 350°F (175°C). Grease an 8.5 x 4.5-inch loaf pan generously with nonstick spray. Proper prep helps this moist loaf release cleanly.
  • Mix dry ingredients: In a large bowl, whisk flour, sugar, baking powder, and salt for about 30 seconds to evenly distribute leavening.
  • Whisk wet ingredients: In a separate bowl, whisk milk, egg, melted butter, and vanilla until smooth and combined.
  • Create batter: Pour wet into dry and stir gently with a spatula until just combined. A few small lumps are fine. Batter will be thin—this is correct.
  • Bake: Pour into prepared pan and bake 60–70 minutes, until a toothpick in the center comes out clean or with a few moist crumbs and the top is golden brown.
  • Brief cool: Cool in pan on a rack for 10 minutes to set, then carefully remove loaf to parchment.
  • Cinnamon sugar coating: Brush warm loaf all over (top and sides) with melted butter. Mix sugar, cinnamon, and nutmeg; sprinkle generously on all sides to coat.
